Chocolate Oatmeal Cookies

There’s something about adding oatmeal to a chocolate cookie which makes it seem healthier. Now, I’m not here to claim what’s healthy for you or not because on De Engelse buurvrouw, it’s just all about food which is delicious and simple to make!

I’ve had this recipe for chocolate oatmeal cookies written out in my recipe book for years but it’s one that I go back to often. I always have the ingredients for it at home and it takes hardly any time to make a large batch of yummy cookies (so large that last time I had to send some to the office with my partner to share with his colleagues so I didn’t eat them all myself!).

I like to include mixed spice (or “speculaaskruiden” as this is the closest I can find to mixed spice in the Netherlands) as it brings comfort and warmth from the cinnamon and other spices. You could leave it out though if you just fancy a more traditional cocoa flavour.

I’ll also throw in some chocolate chips (if I have any in the pantry) to add a bit more substance to each bite and make these even more chocolatey.

Instructions
  1. Cream sugar and butter together.
  2. Beat in egg white and vanilla essence.
  3. Add and mix in dry ingredients - cocoa powder, baking powder, salt, mixed spice.
  4. Mix in oats.
  5. Place spoonfuls of the mixture onto a greased baking tray (or use baking/parchment paper on the tray). Pat each spoonful down to flatten them a bit.
  6. Bake in a pre-heated oven at 175°C (350°F) for 8-10 minutes.
Recipe Notes

If I add chocolate chips, I use 75-100 g of plain or milk chocolate chips.
