Restaurant NOÏS (Oude Vismarkt 10, 8011 TB Zwolle) opened in June 2020 after we’d all spent the previous few months stuck at home in the first lockdown. It came at a time when most of us weren’t seeing friends or family regularly and going out for dinner still came with its challenges and a feeling of hesitancy. As such, I was vaguely aware that a new place was opening in the city but, without the usual catch ups and time spent together, I didn’t hear much about it and over time have only had one friend mention that she’d been and it was great.
NOÏS has therefore sat on my list (yes, I keep an actual list of food places I want to visit) for over 18 months until my partner and I stopped by as part of a WijnSpijs takeaway walk earlier this year. The takeaway walk is a ticketed event which lets you visit five specific restaurants and pick up a delicious dish at each place to take with you and eat as you continue your walk. The mushroom-focused dish we had at NOÏS was beautiful to look at and even tastier to eat:
This brief but lasting experience reminded me that NOÏS still lingered on my wish-list of places to try so when my parents visited from England in February, we figured it would be a good opportunity to go there for a special dinner together.
NOÏS offers a 2-, 3- or 4-course lunch menu and a 5-, 7- or 9-course dinner menu. After that, it’s down to the chef and his team. This is perhaps my favourite way of eating because I hate having to choose one option from a menu when often everything sounds good and I want to try it all.
As a group of 4, we went to NOÏS for a mid-week dinner and chose to have 9-courses. I’m actually not going to go into the details of each dish on here as I don’t want to spoil the surprise of what everything was. I will say though that we were blown away by each of the stunning dishes which looked and tasted incredible and with flavours that built perfectly through the nine courses. By the end, I was full but comfortable and mostly just very, very happy.
There is one course (hint: a very cheesy one) that I didn’t take a photo of and that’s because we were so excited when it was put on the table that we dug in right away and I forgot to get the camera out!
The service throughout the evening was excellent – welcoming, friendly and helpful. As a complete experience, the dinner we had at NOÏS will stay in my mind for a long time to come. I’ve had the luxury of eating at Michelin-starred restaurants around the world and I honestly couldn’t separate the food and service at NOÏS from a lot of those experiences. Every detail on each dish felt so well-considered and everything had a place in creating balanced, memorable flavours.
I’m already excited for our next visit to NOÏS as I don’t believe for a minute that it would be any less wonderful than this first time. I’m also keen to try the lunch menu and see what that’s like. I can’t recommend NOÏS enough based on my experience and I know my partner and my parents feel the same way.
